Roasted Sweet Potatoes with Apples and Pecans
Makes 4 servings1.5 lb sweet potatoes (~2 large), peeled, chopped
Ingredients:
2 apples, chopped
1/2 cup water
1 tsp ground cinnamon
1/4 cup chopped pecans
Directions:Preheat oven to 375ºF
Place potatoes in 13×9-inch baking dish sprayed with cooking spray. Add apples, apple juice and cinnamon; mix gently.
Bake 40 min.; top with nuts
Bake add’l 15 min or until potatoes are tender and moist of the liquid is absorbed
Serve immediately. Is delicious, and no added sugar!
