This was a sauce Connie made up during one of our Detox Elimination Challenges. It isn’t ACTUALLY cream, but it is creamy, and sure is delicious! Goes great on zoodles. Check it out.
Ingredients:
1 cup raw cashews (soaked overnight or soaked in hot water for 10 minutes to soften)
1/2 jar roasted red peppers (in water, not oil)
1/3 cup water (more if you want a thinner sauce)
1/4 cup nutritional yeast
2 cloves garlic
Salt and Pepper to taste
Pinch cayenne pepper (optional)
Directions:
Boil cashews for 20 minutes, then turn off heat and soak 10 more minutes; drain. Place in food processor with the rest of the ingredients. Process until smooth, about 1 minute or so. Toss with spaghetti squash or spiralized veggies and top with fresh parsley. Yummmmm!
