Breakfast Split
Ingredients:
1 banana, sliced long-wise
1 single-serving cup of plain Greek yogurt (or Silk almond for a vegan option — preferred)
3 strawberries, sliced
1 small handful raspberries/blackberries/blueberries
1 tsp cacao nibs
1 tsp nut butter (peanut, cashew, or almond)
1/2 cup gluten-free granola (or grain-free granola)
Directions:
1 – Heat non-stick skillet with 1 tsp of coconut oil and caramelize bananas cut-side down (if you have time), until they begin to brown).
2 – While they’re browning, slice berries, rinse, and compile.
3 – Move bananas to bowl/plate (arrange as desired; side-by-side or criss-cross)
4 – In-between or on-top-of bananas, place yogurt/dairy-free yogurt, drizzle nut-butter. Top with the berries and the cacao nibs.
Extra tips:
**plain yogurt (dairy or vegan) is best because it’s less sugar; otherwise go vanilla
**you can mix the yogurt and nut butter together first before placing between bananas
**add a sprig of fresh mint for added bonus
**if you’re extra bougie, go for some coconut whipped cream (or regular, if you consume dairy)
