Pineapple Cucumber Onion Salad

This is a simple, delicious salad that is refreshing and light. It will make a great side dish for any of your summer dishes, including fish tacos — my personal favorite!

Serves 4 people

Ingredients:
1 small cucumber, chopped (seasonal)
1 ½ cups fresh pineapple, chopped
2 ripe avocados, chopped
½ medium red onion, minced (seasonal)
1 jalapeno (optional), minced (seasonal)
½ cup fresh cilantro, finely chopped (seasonal)
1 Tbsp lime juice
Pinch of sea salt

Directions:
Combine cucumber, pineapple, avocado, onion, and jalapeno in a bowl. Squeeze some of the pineapple out into your mixing bowl before adding. Add lime juice, sea salt, and cilantro and stir gently to combine. Serve cold.
