These are small, simple, easy, and delicious. Because of their few ingredients, we recommend making medallions vs larger pancakes, as they can be hard to flip. But once done, they’re so good that you don’t even need any toppings!
Makes about 30 medallions.
1 tsp cinnamon
Sprinkle salt and pepper
Directions: Blend (don’t whisk), pour 2-3 inch medallions on the griddle or skillet. Flip when they start pocking like regular pancakes. Second side doesn’t need to cook as long. Enjoy!
