Lentil-veggie Soup
1 cup dry lentils
1.5 cups chopped carrots
1.5 cups chopped celery
3 minced garlic cloves
1 tsp dried basil
1 tsp dried oregano
1 tsp dried thyme
1 tbsp dried parsley
2 bay leaves
3.5 cups vegetable broth
1.5 cups water
1 can diced tomatoes
Fresh cracked black pepper to taste
Directions:
Rinse lentils. Place all ingredients in a crock pot on low for 12 hours (or on high for at least 5 hours)
