Date Energy Balls

This are a great snack that scratches the itch when craving chocolate and gives you an immediate boost of energy without a crash. They can be addicting, but because they are not loaded with refined sugars, you typically don’t even need or desire more than two!

Makes about 20 balls.

Ingredients:

16-20 medjool dates (soak in hot water for 5-10 minutes, or longer if very dry)

1/4 cup cacao nibs

2 Tbsp cocoa powder

4 Tbsp hemp seeds (Walmart carries them)

1/4 cup walnuts

Directions:

Grind walnuts in the food processor until mealy. Add in the nibs, cocoa powder, and half of the hemp seeds.  Add dates one at a time and blend until everything is a paste consistency. Turn off the food processor, remove the blade, and roll into balls. Roll the balls in the rest of the hemp seeds. So good!
