This is one of our dietitian Jean’s favorite soups! Not a meat-eater? No sweat; replace with a meatless option!
Chorizo & White Bean Soup
Ingredients:
1lb chorizo sausage (*or, if not a meat-eater, Soyrizo, or your favorite spicy meatless sausage)
2tbsp extra virgin olive oil
2 cups yellow onion, chopped
2 cups carrots, chopped
1/2 pound small red potatoes, chopped
3 garlic cloves, minced
1tsp paprika
1tsp kosher salt
1tbsp tomato paste
2 cans Great Northern Beans, drained and rinsed
32oz chicken or vegetable broth
1/2 cup fresh parsley, chopped
Directions:
Cook chorizo, stirring occasionally until browned. Drain well (unnecessary for soyrizo, etc).
Heat oil over medium-high. Add onions, carrots, potatoes, garlic, paprika, salt. Sautee until tender. Stir in tomato paste, and cook for about a minute, stirring continuously.
Increase heat to high, add beans, broth, and chorizo and bring to a boil. Reduce heat to medium and simmer for 20 minutes. Skim fat off occasionally. Stir in parsley. Serve immediately.
